Sticky Date & Oatmeal Cookies

During the first lockdown, I had a surprise delivery of these homemade sticky date cookies that were absolutely delicious. I had to ask for the recipe because I wanted to recreate them at home. The only time that I use dates is when I am making lumberjack cake but now, I have another sticky date recipe to add to my collection of sweets.


This recipe was adapted from Donna Hay's Caramel Sticky Date Cookies.

Ingredients

360g pitted dates

85g brown sugar

125g butter, cubed

1 tsp bicarb soda

140g flour

85g oats

1 egg

1 tsp cinnamon

1 tsp vanilla extract


Instructions

  1. Preheat the oven to 160 degrees Celcius.

  2. Line two baking trays with baking paper and set aside.

  3. Place the pitted dates into the TM bowl, chop 10 seconds/speed 5.

  4. Add the brown sugar and butter, cook 8 minutes/60 degrees/speed 1.

  5. Add the bicarb soda, stir 10 seconds/speed 2.

  6. Remove the lid and allow the mixture to cool down until the temperature drops below 40 degrees.

  7. Add the remaining ingredients to the TM bowl, combine 15 seconds/speed 4. If your mixture sticks to the side of the TM bowl, scrape down the sides and mix for a few more seconds.

  8. Divide and shape the mixture into 2 tbsp balls, flatten them slightly with a fork and place on the baking trays.

  9. Bake for 12-14 minutes or until golden brown.

  10. Allow the cookies to cool on the trays for 5 minutes before transferring them onto a wire rack to further cool.

  11. ENJOY with a cup of tea or drink of choice :)


Notes

This is a thermomix recipe but if you want to make these, you can use the Donna Hay recipe and substitute the wholemeal spelt flour with plain flour and the spelt flakes with oats.
